Yann Brys

Yann Brys, who was awarded the title of MOF (Best Craftsman of France) in 2011, drew inspiration from an early age by cooking with his mother. 

Trained at the Toulouse Hotel School, he found his calling working with Michel Mendiela in Cannes, then with the MOF Philippe Urraca, and worked for renowned establishments including Fauchon, Concorde Lafayette and Le Bristol in Paris. 

He revolutionised cream piping with his ‘whirlwind technique’ on a potter’s wheel, which is now famous all over the world. In parallel, he became Creative Director at Dalloyau. 

In 2018, he created Maison Tourbillon by Yann Brys, a contemporary patisserie based in Saulx-les-Chartreux, then in Marolles-en-Hurepoix in 2024. He offers elegant, architectural creations with a focus on flavour and fruit. 

Committed to passing on his knowledge, he also works as a trainer at an international level and is ambassador for Les Vergers Boiron, Prova Gourmet and Elle et Vire.
