INTRODUCTION

On 17 October, Editions La Martinière published « Craquage » (in English, ‘Cracking’) by Sébastien Bouillet, a pastry chef and chocolate maker based in Lyon and Japan. 

Chocolate, caramel and streusel tart, vanilla flan, marshmallow bears, giant marbled madeleine, chicken bun with curry sauce, gluten-free brownie, chiffon cake, XXL gianduja and praline cookies, praline brioche, or even smash croissant with burrata and pesto… There are 60 sweet and savoury recipes specially created by Bouillet, offering a blend of tradition and innovation, to make you crack all day long! 

 ‘My aim with « Craquage » was to bring together in one book what has always made me tick: gourmet pleasure, without compromise. Sweet and savoury, each recipe expresses an emotion, a memory or a desire. In this book, I share my journey, my roots (from Lyon), my passion for good products and my taste for boldness.
