Yoshiaki KANEKO
After a few years in France at top Parisian brands, such as La Durée, Alain Ducasse at the Plaza Athénée, Yoshiaki Kaneko opened his own boutique “Paris s’éveille” (“Paris awakens”) in Tokyo in 2003 and at the “Chant du Coq” (Rooster’s Song”) in Versailles in 2013.
His pastry philosophy is first and foremost the respect for French pastry. His recipes are contemporary while keeping traditional recipes.
