Mathieu learned his trade at the JEAN pastry shop in Colmar. He furthered his training at JACQUES’ in Mulhouse. Then, he left for Brussels to join MAHIEU’s team. After Belgium, he worked 3 years in Paris at Pierre HERME’s. In 2008, he was sent to Tokyo to supervise one of Pierre HERME’s boutiques for a period of 3 years.
In March 2011, he and his Japanese companion Mina joined the family business in Sélestat.
Since then, motivated by his need to create, Mathieu hasn’t stopped surprising us with his many delicious and original creations. It is always a true festival, as much for the eyes as for the taste buds of our clientele, always hungry for new things.
